Abstract: Holstein steer calves (n = 25) were used to evaluate the effects of treadmill exercise (TME) on blood metabolite status and formation of dark-cutting beef. Calves were blocked by BW (156 {+/-} 33.2 kg) and assigned randomly within blocks to 1 of 5 TME treatments arranged in a 2 x 2 factorial design (4 or 8 km/h for a duration of 10 or 15 min) with a nonexercised control. Venous blood was collected via indwelling jugular catheters at 10, 2, and 0 min before TME and at 2-min intervals during exercise. Nonexercised steers were placed on the treadmill but stood still for 15 min. Serum cortisol levels, as well as plasma concentrations of glucose, lactate, and NEFA, were similar (P > 0.05) before TME. Serum cortisol concentrations were unaffected (P > 0.05) during the first 6 min of TME, but between 8 and 15 min of TME, cortisol concentrations were greater (P < 0.05) in steers exercised at 8 km/h than those exercised at 4 km/h or controls (speed x time, P < 0.001). Although TME did not affect (P > 0.05) plasma glucose levels, plasma lactate concentrations in steers exercised at 8 km/h increased (P < 0.05) sharply with the onset of the TME treatment and remained elevated compared with steers exercised at 4 km/h or unexercised controls (speed x time, P < 0.001). Exercised steers had the lowest (P < 0.05) plasma NEFA concentrations during the first 6 min of TME compared with unexercised steers; however, NEFA concentrations were similar after 10 and 12 min of TME, and by the end of TME, steers exercised at 8 km/h had greater (P < 0.05) NEFA levels than nonexercised controls or steers exercised at 4 km/h (speed x time, P < 0.001). Even though muscle glycogen levels and pH decreased (P < 0.001) and muscle lactate concentrations increased (P < 0.001) with increasing time postmortem, neither treadmill speed nor TME duration altered postmortem LM metabolism. Consequently, there were no (P > 0.05) differences in the color, water-holding capacity, shear force, or incidences of dark-cutting carcasses associated with preslaughter TME. It is apparent that preslaughter TME, at the speeds and durations employed in this study, failed to alter antemortem or postmortem muscle metabolism and would not be a suitable animal model for studying the formation of the dark-cutting condition in ruminants.

Abstract: This study utilizes an analysis technique commonly used in marketing, the conjoint method, to examine the relative utilities of a set of beef steak characteristics considered by a national sample of 1,432 US consumers, as well as additional localized samples representing undergraduate students at a business college and in an animal science department. The analyses indicate that among all respondents, region of origin is by far the most important characteristic; this is followed by animal breed, traceability, animal feed, and beef quality. Alternatively, the cost of cut, farm ownership, the use (or non-use) of growth promoters, and whether the product is guaranteed tender were the least important factors. Results for animal science undergraduates are similar to the aggregate results except that these students emphasized beef quality at the expense of traceability and the non-use of growth promoters. Business students also emphasized region of origin but then emphasized traceability and cost. The ideal steak for the national sample is from a locally produced choice Angus, fed a mixture of grain and grass that is traceable to the farm or origin. If the product was not produced locally respondents indicated that their preferred production states are, in order from most to least preferred, Iowa, Texas, Nebraska and Kansas.

Abstract: In modern intensive husbandry systems there is an increasing tendency for animals to interact with technical equipment. If the animal-technology interface is well-designed this may improve animal welfare by offering challenges for cognitive adaptation. Here a system and its application is presented that acoustically calls individual pigs out of a group (n = 8) to a feeding station. In three different learning phases, the computer-controlled “call-feeding-station” (CFS) trained the animals to recognize a specific acoustic signal as a summons for food, using a combination of classical and operant conditioning techniques. The experimental group's stall contained four CFSs, at each of which one animal at a time was able to feed. When an animal had learned to discriminate and recognize its individual acoustic signal it had to localize the particular CFS that was calling and to enter inside it. Then, it received a portion of feed, the amount of which was adapted to the respective age of the animals. Each animal was called at several, unpredictable times each day and the computer programme ensured that the total feed supply was sufficient for each animal. In the last phase of the experiment the animals, in addition, had to press a button with an increasing fixed ratio for the delivery of feed. It was demonstrated that the pigs were able to adapt quickly to the CFSs. Although they were challenged over 12 h daily by requirements of attention, sensory localization and motor efforts to gain comparatively low amounts of feed, they performed well and reached fairly constant success rates between 90 and 95% and short delays between 14 and 16 s between a summons and the food release in the last phase of the experiment. The weight gain during the experiment was the same as in a conventionally fed control group (n = 8). We therefore conclude that CFSs present a positive challenge to the animals with no negative effects on performance but with a potentially beneficial role for welfare and against boredom. The system is also a suitable experimental platform for research on the effects of successful adaptation by rewarded cognitive processes in pigs.

Abstract: The problem of how to objectively assess the overall welfare status of animals under farming conditions has contributed to an ongoing debate that has hampered actual decision making on animal welfare. For this reason we constructed a model based on the assumed hierarchical organization of the animals' needs for overall welfare assessment in the case of pregnant sows. This model is implemented in a computer-based decision support system that takes a description of a housing and management system as input and produces a welfare score as output. A formalized procedure was used to construct the model for welfare assessment in pregnant sows on the basis of available scientific knowledge. This SOWEL (from SOw WELfare) model contains 37 attributes that describe the welfare-relevant properties of housing and management systems. In the decision support system these attributes are linked to scientific statements and a list of needs to provide a scientific basis for welfare assessment. Weighting factors that represent the relative importance of the attributes are derived from the scientific statements about the various welfare performance criteria that have been measured by scientists. The welfare score is calculated as the weighted average score. All information in the decision support system is stored in tables in a relational database such that newly available knowledge and insights can be incorporated to refine the model. The model has been developed in line with several existing models but it differs from these models in that it is the first to provide a formalized procedure to explicate the reasoning steps involved in welfare assessment based on available scientific knowledge. Abstract: Traditionally, dogs have been trained by operant conditioning techniques; that is, dogs make a desired behavioural response and this response is reinforced by a reward such as food. This type of training is very effective in training dogs to perform basic obedience behaviours (e.g. `stay'). However, dogs are social animals and should be predisposed to learn from social stimuli. In the present study, we used a modified version of the model-rival technique that has been extensively used in experiments investigating the cognitive ability of parrots. In this technique, social stimuli are used to create in the animal an interest in the object without the use of food or other rewards. Therefore, the animal learns the name of the object (intrinsic reward) and not that the object's name means food. In this experiment we compared the learning ability of nine pet dogs to solve the same retrieval-selection task having been previously trained using operant conditioning or model-rival techniques. The retrieval-selection task was the dogs had to correctly select the commanded object to bring to the experimenter from a group of three similar objects. The results show no difference in the speeds with which the dogs solved the test--demonstrating the efficacy of the model-rival method. This is the first time that the effectiveness of the model-rival technique has been experimentally demonstrated with dogs. Furthermore, we believe that the methodology reported in this paper has applications in dog training and in experiments into dog cognition.
